New Luxury Hotel in Scottsdale: Caesars Republic Scottsdale

Scottsdale’s newest luxury resort is now open– Caesars Republic Scottsdale! I had the chance to check out the glamorous grand opening event for Caesars Entertainment’s first non-gaming hotel in the United States.

It was quite a spectacular experience, from fire dancing to a drone show. But my most favorite aspect was the food from Giada De Laurentiis’ new concept, Luna by Giada. You can view my video coverage by watching my Reel on Instagram.

I look forward to fully experiencing the property and its three culinary concepts: Pronto by Giada, Luna by Giada, and SEVEN (Riot Hospitality Group of Scottsdale).

Luna by Giada

Luna by Giada is one of two concepts by celebrated chef and author Giada De Laurentiis at Caesars Republic Scottsdale. This sophisticated, high-energy concept nods to Chef De Laurentiis’ Roman heritage and highlights her passion for traditional Italian cuisine with California and Mediterranean influences. Serving as the Caesars Republic Scottsdale’s signature restaurant on the first floor, the vibrant concept will be open to locals and visitors alike.

The grand opening event included both recipes that everyone already knows and loves, and some new ones, like the Lemon Pizza– which was served to me by Giada herself!

  • Lemon Pizza: mozzarella, garlic creme sauce, caciocavallo Cheese
  • Bacon-Wrapped Medjool Dates: hot Italian sausage, lemon basil crema
  • Honey Ricotta Crostini: lemon zest, crushed pink peppercorn, sea salt
  • Vodka Rigatoni: Luna by Giada will serve a new pasta, Nodi Marini Alla Vodka, paired with a creamy arrabbiata sauce.
  • Oysters: Luna by Giada will instead serve her Oyster Crudo, which are prepared with a prosecco mignonette.

To guarantee a booking at Luna by Giada, it is recommended to make a reservation on OpenTable. I heard they have been quite busy since their opening on March 6! Once I dine at Luna by Giada, I will share a new blog post on my visit. I cannot wait to experience her new concept!
